Cacao Cookie Bars (Gluten, Dairy, & Egg Free)

I decided to convert the recipe into a bars. With none of the fuss of individual cookies, these are an easy weekend treat to make.



Ingredients

2 1/4 cups GF flour blend

1/4 cup cacao powder

2 cups GF quick oats

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon sea salt

2 teaspoons cinnamon

1 cup baking fat, softened (I used tallow)

1 1/2 cups coconut sugar

3/4 cup maple syrup

1 cup coconut milk, room temperature

1 teaspoon vanilla extract

3/4 cup chopped pecans

3/4 cup semi sweet cacao chips



Directions

Preheat oven to 325F. Spray 2 8x8 baking dishes (I used glass).

Combine all dry ingredients, whisk, and set aside.

Beat together baking fat and coconut sugar until light and fluffy.

Add maple syrup, coconut milk, and vanilla extract until well combined.

Sift dry ingredients into wet; stir until combined and a soft batter forms.

Mix together pecans and cacao chips with 1 teaspoon of GF flour. Add to batter and mix until just combined.

Spoon into baking dishes and smooth.

Place in oven and bake for 45 to 50 minutes.
