Gluten, Dairy, and Egg Free Berry Rustic Pie

Need and allergen free dessert for your spring picnic? This berry rustic pie is free of gluten, dairy, eggs, and refined sugar, yet is still delicious. My brother’s fiancee who doesn’t like pie loves this one, and has asked for it to be served at their wedding!

This is adapted from a recipe by Sarah Bakes Gluten Free (https://www.sarahbakesgfree.com/2015/03/gluten-free-vegan-rustic-berry-pie.html)

For the crust:

1 1/2 cups gluten free flour (I used Bob's Red Mill 1 to 1)

1 tablespoon coconut sugar

1/2 teaspoon salt

1/2 teaspoon cinnamon (optional)

3/4 teaspoon orange peel (optional)

3 1/2 tablespoons coconut oil

3 1/2 tablespoons lard

1 tablespoon soda water

5 -6 tablespoons ice water

For the filling:

4 cups frozen mixed berries

1/4 cup juice or water

2 tablespoons lemon juice

Pinch of salt

1/2 teaspoon vanilla

Honey or coconut sugar to taste

5 tablespoons instant tapioca

Directions:

Mix dry ingredients. Using a handheld pastry cutter or attachment on your mixer, cut in coconut oil and lard. Mix until well combined. Add soda water and ice water. Mix until a dough forms, adding more ice water if needed. Wrap in plastic wrap and refrigerate for at least 30 minutes.


On a medium setting on your stove, cook berries with juice and lemon juice. Once it is simmering, add salt, vanilla, and add honey to taste until it is slightly too sweet. Spoon 3/4 to 1 cup of liquid into a glass bowl, and add instant tapioca tablespoon by tablespoon, whisking well after each addition. Add to berry mixture, and stir well, making sure there are no clumps.

Preheat oven to 400F.

Roll out dough between two sheets of parchment paper until it’s about 1/4” thick. Move crust onto a baking sheet. Spoon berry mixture into center of dough, then fold dough towards the center, forming a square. Pinch the edges together. Put in oven, and bake for 30 minutes, or until crust is golden and sounds hollow when you flick it. Let cool for at least 30 minutes.

This pie saves well over a few days. When it’s completely cool, it can even be eaten with your hands. But it’s always gone before then in my house!
