My favorite gluten free flour blend for baking

This is a simple blend that both my mother and I use for baking, and it's the one I teach to my clients in my baking classes. The flours may be either bought in a store, or ground at home.


2 cups brown rice flour

1 1/2 cups tapioca flour

1 cup sweet white rice flour

2 1/2 teaspoons xanthan gum

And just mix. You can also sift it all together first if the flours are lumpy.



Here is the same recipe doubled:


4 cups brown rice flour

3 cups tapioca flour

2 cups sweet white rice flour

5 teaspoons xanthan gum






Then when you have assembled your blend, you can mix up these excellent simple pancakes from Sarah Bakes Gluten Free!

I made these for Shrove Tuesday last week, and they're the first egg free pancake recipe that have worked.
