What I'm Cooking For Holy Week and Easter

Food is an important part of holidays. But when you're gluten, dairy and egg free, it becomes a bit more complicated. You must either adapt your old recipes, or find new ones. Here is my menu for the next few days, with the accompanying links. Unless noted, everything is gluten, dairy, and egg free.

Maundy Thursday


Some people like to celebrate the Last Supper with a Passover Seder, but I will not have time for that on Thursday. Unlike last year, we will be having a church service, and my mother has arranged to have our very elderly dog put down : ( He has however had a very good and otherwise healthy life and had been with us for over 16 years.

However, I am planning on making matzo ball soup, and matzah to accompany it.


I must first confess to cheating when I make matzo balls. I use Streit's Gluten Free Matzo Ball Mix. But instead of adding eggs, I add two to three tablespoons of aquafaba, which is the liquid in canned chickpeas or other canned white beans. I form the dumplings and bake them in the oven for about 10 -12 minutes, following the directions on this recipe. I've never tried the full recipe, but it looks good.






I saw this recipe online for Yemeni Chicken Matzo Ball Soup, and decided that I wanted to try it! This recipe add spices including cloves, cardamom and cumin, that should make a wonderful and comforting pot of soup.

Note: the matzo balls in this recipe have gluten and eggs.


This recipe for matzah from GF Jules is one that I found a couple of years ago. It comes together very quickly and easily, which is how it's supposed to be. Matzah is supposed to be made and baked in under 18 minutes, because any longer then that, the flour begins to ferment.



Good Friday and Holy Saturday


We'll likely just be eating leftovers, unless we decide to do something special.

I'll be spending a fair amount of time prepping as much as possible.



Easter Breakfast


Since we are having church, we will be having a breakfast potluck, and I'm planning on making these blueberry scones from Sarah Bakes Gluten Free on Saturday night, so they are as fresh as possible.


And I'm hoping to make my favorite maple sausage breakfast patties from Autoimmune Wellness so I can bring those too.



Easter Dinner


My dad always prepares the meat; we nearly always have both ham and lamb. I make a few sides, and the gluten free desserts.


I will definitely be making the drop biscuits in my video.


I also will be trying this new recipe that I found on Saveur for carrot and pistachio salad with a fig vinaigrette, provided there's fresh figs in the store!



Easter Dessert


My mother has asked for rhubarb cake. Before we both become sensitive to eggs (at the same time oddly enough) I would make a very delicious rhubarb and blueberry cake based off of a Danish apple cake recipe in The Old World Kitchen. However, the recipe takes quite a lot of eggs, so there's no way to adapt it. However, I have successfully made a pineapple upside down cake using this recipe from nm_meiyee, so I'm going to use that cake as the cake base, but put rhubarb and blueberries in between the two layers of cake.


And lastly, I will be making shortbread. I even made a video last year; it was the second video I ever made. I'm planning to make 2 different pans; 1 flavored with anise and orange peel, and another with lavender.
